In a nut shell
The steaks that we sell are masterpieces. They are of a very high quality and are within the top 1-2% of all beef sold.
Yes, they are significantly more expensive than their flavour challenged and tough counterparts, the dreaded 'USDA Select' and the majority of the marginally better 'USDA Choice'. Other than sharing a name and originating from a cow all comparisons need stop there.
Why should we settle for anything less than Prime? We may not eat it as much but missing out on the opportunity to savour the flavour of a succulent USDA Prime steak seems an unbearable compromise.

its cheaper than crappy steak."

Eating USDA Prime is a lot like flying first class....it's oh so difficult to go back to cramming yourself into that soiled, undersized seat and sacrificing every possible inch of personal space.
So it is with steak. Carving off a slither of USDA Prime filet and having it melt in your mouth is an experience to behold and likely never forget. Try eating a sub standard cut of beef after that. Misery.
